Food Service Worker

Reports to: Manager                                                                                                           Status: Non-Exempt

Department: Residential/Retail                                                                                        Environment: Union

Summary of Position:

Participate in the work engaged in serving foods, in cleaning facilities, and in preparing meals.

Duties & Responsibilities:

  • Maintains a guest focus while performing duties including customer service and up selling techniques.
  • Assumes 100% responsibility for quality of products served.
  • Complete opening and closing checklists to include station inventory responsibility.
  • Follow daily prep list or production sheet at the start of each shift for assigned duties.
  • Promptly reports necessary equipment repairs, food quality or shortage problems to Manager.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, recipes, policies, and procedures.
  • Complies with Food Management Fundamentals process to include taking inventory of food on hand at the designated station and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area.
  • Assists cooks and others in preparing and cooking food in short order
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, stores, labels, and rotates all products properly and in accordance to applicable city and state laws.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Follows and completes daily production records.
  • Monitors and records food temperatures.

Starwood’s Hotel Housekeepers Fight “Fake Green” Program

This December, actions to highlight the work and struggle of hotel housekeepers are being coordinated across the globe,  in a “Worldwide Week of Action for Dignity & Safe Work”, with housekeepers from over 30 countries organizing events in their regions.

Chicago’s Local 1, where housekeepers say Starwood’s “Make A Green Choice” program could cost them their jobs,  is one of five UNITE HERE locals participating in North America.

Housekeepers report that the controversial program has led to workplace injuries, lost hours and income for their families, and more chemicals being used on the job. 

On December 5th, housekeepers from three Starwood hotels (Sheraton, Westin River North, and W. City Center) took to the streets of Chicago in protest, organized delegations to all three hotels, and delivered letters to management demanding that Starwood cut the program.

The “Green Choice” program has been widely seen as a way for hotels to cut labor costs rather than conserve energy. Not only do housekeepers get reduced hours when guests use it, but they are forced to work much faster to maintain the same room quota when those rooms are ready to be cleaned. Whereas an average room might usually take 30 minutes to clean, after three days of no service that same room can take an hour and a half – often times using far greater amounts of cleaning products. 

Local 1 represents 3,000 housekeepers in the city. This is the first time the program has been publicly denounced in Chicago.

UNITE HERE HEALTH’s new plan

Starting November 1st, significant healthcare plan changes have begun for our members.

As healthcare costs rise, we are taking steps to make sure we can keep great health insurance into the future without sacrificing raises.  These changes will affect all members in UNITE HERE HEALTH plans (except River Boat Casino workers).

What do you need to know about the changes?

1.  We are going into a more selective network in Blue Cross Blue Shield, so some hospitals and doctors will no longer have coverage.  We all have to learn to check first to make sure a doctor is in the network.

2.  We are moving away from Thorek as our preferred provider.  We will now have the Presence Health System and its 13 hospitals and 1,400 doctors with little or no co-pays and 100% coverage. Thorek will remain in the network but will have higher co-pays.

Hudson Midway workers ratify first union contract

HudsonMDW1stOn April 11, 2014 Hudson News workers at Midway Airport ratified their first union contract covering about 70 workers. Hudson Midway workers joined the union in an effort to remedy the disparity between working conditions for airport workers at O’Hare Airport versus workers at Midway Airport. Just last December, Alderman Howard Brookins (21st ward) spearheaded a resolution calling for a hearing to examine why Hudson News, a retail operator at both airports, was not treating all of its workers equally. This new contract resolves the inequality issue between the airports for Hudson News workers.

The three-year contract provides sick days, affordable health care, and up to a 40% increase in take home pay for some workers. Additionally, the contract establishes a joint labor-management committee to ensure that everyone’s rights are respected in the workplace and to deal with operational issues.
